Walnut and Fig Loaf

A couple of years ago I came across this recipe on the back of the Allinson Country Grain Flour packet.  I appreciate I sound like I should be sponsored by Allinson. I’m not, it’s just a jolly nice loaf of bread.  I hope you enjoy it as much as I do.

500g Allinson Country Grain Bread Loaf Flour

1 sachet (7g) Allinson Easy Bake Yeast

300ml Lukewarm Water

150g Chopped Dried Figs

2tbsp Walnut Oil

1tbsp Malt Extract

1tbsp Salt

75g Chopped Walnuts

 

Step 1: Place the flour, salt and yeast in a large bowl. Mix together the oil, water and malt extract. Pour into the flour and stir together until a soft dough starts to form.

Step 2: Add the figs and walnuts then knead until the dough is elastic.

Step 3: Shape into a round and place on a non-stick baking tray. Cut a deep cross in the centre.

Step 4: Cover loosely with oiled cling film and leave to rise in a warm place until doubled i size, then remove the cling film. Pre-heat the oven to 230C/fan 210C/gas mark 8.

Step 5: Place the bread in the centre of the pre-heated oven and bake for 15 minutes. Reduce the oven temperature to 200C/fan 180C/gas mark 6 and bake for a further 15/20 minutes until the bread has risen, is golden brown and sounds hollow when tapped underneath.
